If there is one recipe that Taylor and I will without fail make EVERY SINGLE WEEK it is Sheet Pan Fajitas! We've been making this, to enjoy with our favorite guilty pleasure show after the boys go to bed, for years which means we've also really perfected it. Y'all only need a handful of ingredients, one sheet pan, and about 20 minutes.
Now about the taco seasoning y'all, our tried and true is Five Islands and you better believe we stock up on the Costco bottle. You can use your taco seasoning of choice, but there is jsut something about the Five Islands plus we hardly ever run out since the bottle is longer than my head. Now without delay, let's get on to the recipe.
RECIPE
Sheet Pan Fajitas
Serves: 2-4
Ingredients
~1 lbs flank steak
1 red bell pepper
1 green bell pepper
1/2 yellow onion
Salt
Pepper
Taco seasoning of choice
1) Start oven broiler on high.
2) Thinly slice bell peppers and onion.
3) Set flank steak in the middle of sheet pan and season both sides with salt, pepper, and taco seasoning.
4) Cook steak for 5 minutes then flip and continue cooking for 5 more minutes {this is for medium rare so cook longer if more doneness is preferred. Also add time depending on thickness}.
5) Remove flank steak and set aside on your cutting board. Let rest at lest 5 minutes
6) Evenly arrange bell peppers and onion on sheet pan.
7) Cook for 5 minutes then toss and continue cooking while you cut your steak into bite sized pieces.
8) Remove veggies from oven.
9) Melt shredded cheese on flour tortilla {I do about 25 seconds in the microwave} then arrange steak, veggies, and desired extra toppings. My go-to's are Cholula chipotle sauce and a squeeze of lime.
10) Bonus point if you leave a little room at the bottom of the tortilla so you can fold it up then roll over the sides…let’s be honest no one wants to loss all the goodies out the bottom when you take your first bite.
