I genuinely cannot get enough of my Mexican Lager Pork Carnitas recipe lately which is why I've been sharing numerous ways to enjoy them, but my favorite of all the ways just might be the cilantro cauliflower rice bowls. These easy bowls are packed with so much FLAVOR plus even though they are sure to fill you up they're a lighter option when you're craving a burrito bowl. They're also perfect for meal prep in case you need something quick whether you're busy working or chasing after little ones. Feel free to mix up the toppings, but I'm sharing my go-to way to fix up these bowls along with the cilantro cauliflower rice recipe below
Ps my fav place to buy cauliflower rice is from Costco because you can get numerous, large bags of organic frozen cauliflower rice which means it is easy to always have on hand in your freezer.
RECIPE Cilantro Cauliflower Rice Bowls
Serves: 2-3
Ingredients
1 pack frozen cauliflower rice (3 cups)
Juice of ½ lime
1 tsp dried or fresh cilantro
1 tsp salt
1 tbsp ghee
Instructions
Heat ghee in a skillet over medium heat then add frozen cauliflower rice.
Cook rice for 5 minutes, stirring occasionally.
Add cilantro, salt and lime juice. Continue cooking for 5 minutes, stirring occasionally until excess water is evaporated and cauliflower is tender.
For the Bowls
Cauliflower rice
Mexican lager pork carnitas (on blog)
Avocado slices
Roasted + diced green peppers and onion
Lime wedges
Tips
This recipe is perfect for meal prep. Just store the cilantro cauliflower rice and carnitas in separate airtight containers in the fridge. Store cauliflower rice for up to 4 days and pork carnitas for up to 3 days.
